I recently bought 2 new rear tires for my 700. They are the exact same size. But on the machine they stand a bit taller and narrower. Not as much tire touching the ground. When driving now the back end wants to slide around. Anybody experience this? What are your thoughts?

Sounds like the tires got messed up when they made them pic. might help. Even if they say there the same size they will vary in size.

They remind me of a quad tire more than a side x side tire. I have even tried lowering the tire pressure a bit but doesnt help.

Not enough information to help. You didn't post pictures and you didn't say the brand of tire.

The new tires are Carlisle Black Rock. AT 25x10-12. The old ones were Maxxis Bighorn 25x10-12 NHS.

The Maxxis Big Horns are know for having a wide tread and a square shoulder.
It's just the nature of the two different types of tires.

I like the idea of the Big Horns on a Pioneer 500.
500 can use a little extra width for stability.

For the Big Red, as long as they work ok for you they should be fine.
I would guess the Carlisle's would give a little softer ride but might not have as much flotation in mud.
When they are worn out you can decide which you liked better when picking your next set of tires.
