I've used a lot of HDPE and UHMW. Enough to say that 1/8" will have a big sag in the middle. If you don't add a support under it almost any thickness is going to sag (especial with thermal expansion).

My advice (worth less than a cup of coffee)
1. use 1/4" or thicker
2. add something across the middle for support
3. Secure it near the front but let the back slide by slotting the holes or oversize the holes and leaving the bolts loose.
