Marinate your corned beef with fresh crushed juniper berries before cooking. I always throw an IPA Stout or Porter in the stock. Try to use bone broth or turkey or chicken stock. Another yummy is add a fat tablespoon of rough cut German or French mustard. Pommery in the ceramic crock with a plastic red lid comes to mind......
