I'm probably late to your decision, but I wanted to throw in. I put 26" Maxxis Bighorn 2.0 on my 500. They work great! I have never been close to tipping. I think that is more a result of how you ride. I know people who have tipped several brands of sxs. My ride style is similar to yours. I primarily trail ride like you described for work, and I use it for hunting.

You wouldn't regret putting 26"s on.

Where you ride is an even bigger factor. One trip to RRB on bigger tires and not spreading the stance, you'll be on your side unless you just turn around. I had 26's and aftermarket offset wheels and still ended up on my side, (the only time ever). @100Acre had, I believe, 25's on his and has the record for tipping over. When you get into ruts that deep it's just physics.

put on 26” all the way around. Plus 5+2 offset rims, one inch spacers in the rear, removed the sway bar and that took away all my fun. Not once did it come close and believe me I’ve tried. I think I tipped 8 or 9 times and all going less than 7 mph. Mostly from deep ruts.
