Sage Creek is my absolute fav place to stay in Moab! Kinda expensive though. I don't like Sun Outdoors as a whole, they use their money to close trails for Motorized use and have helped shut down 600+ miles on Moab specifically.

I went out to Moab with 3 friends and we all flew into Grand Junction, CO. We rented a couple SxS's from a local rental place and stayed in a hotel in town. It was an unforgettable experience and hope to go out again someday!!!

Seven Mile Rim trail is pretty cool. It's about ten miles north of Moab.
If you're lucky, you can watch carnage on Wipeout Hill.

There is a really helpful visitor center on Center and Main with maps and trail guides.
I can't help with accommodations. We usually get an airbnb.
