New to smoking but not my first.
Trying a pork butt all night at 225.
Wanted to do 200 but my pellet grill only has a choice of 180 or 225.
Went on at 8:30. Will check on it again at 5am.

Wireless monitor and alerts set in case something happens or it hits 170 internal.

Check back in the morning.
Expect it to be stalled out around 150 in the early morning.

Don’t let the stall wig you out…it can be a drawn out affair, before pushing on!
I take it you are slicing it? For pulled I go to 195-200, then wrap in foil, a towel and into a cooler to rest for a couple of hours.

I have let yall down by forgetting to take pictures.

Glad it came out well… to have a moist and sweet pulled pork heat to 170 then wrap with foil.Pore apple juice inside the foil and cook until internal temp reaches 200. Remove from smoker and let it rest for at least 30 minutes.Just a little preparation tip coat your meat with yellow mustard and your favorite rub and let marinate overnight before cooking. Just my 2 cents worth…Hope y’all enjoy!

Just a little preparation tip coat your meat with yellow mustard and your favorite rub and let marinate overnight before cooking. Just my 2 cents worth…Hope y’all enjoy!

The last 2 hours I did end up wrapping in foil, with Irish butter and brown sugar.
I felt it was talking too long.
Might try pineapple juice next time.

For Pork Butt (bone in) I usually coat in Red's hot sauce and then apply Meat Church Voodoo seasoning and start out cooking at 200 - until internal temps are about 175 then I will crank up to 275+ until internal temps are about 205 and probe tender - it makes for good pulled pork. I never thought the Binder really added anything but i have cooked with and without Franks and prefer with Franks.

We just took bacon and put on a foil lined sheet sprinkled with Honey hog and Some with Voodoo. Cook @375 for about 30 min - won't ever cook bacon another way.

Since this summer was hot as balls we ended up cooking this casserole my wife makes in the smoker - to keep from heating the house and just the other day tried it in the oven (while I was cooking Pork on smoker) yep casserole is way better on the smoker too.
