Haha, guess who's number five on the list! I got the exact same response about a month ago when I called to see how far I had moved up the list.. Sales guy said they haven't got a single one in since I put my deposit down. Are you waiting on a particular color? I told them I'll take what ever is available first.

I put a deposit down on a new 2021 P 1000-5 DLX this week with a dealer that had two coming in sometime in October that were still unsold. The next day I called him, and he said he just had just one left, so I took it.
You will like it. I like my 2021 P1K5 Deluxe. I had the opportunity to drive a P1/2K and a RZR 900 today. Granted from what I here, the stock shocks on non LE models aren't the greatest, but my Pioneer rode quite a bit smoother in my opinion.
I'm on a list also, ( 21 1000-5 deluxe ) Dealer told me 7-29 ship date, should have it in 1-2 weeks, Now the dealer is telling me 8-30, for the ship date. I think Honda is playing games with the dealers just stringing us along to keep sales away from other sxs. Looks like by the time we get them, we will be in 22 model year with a price increase !
Don't believe that is the case, all manufactures are feeling the part shortages.

Nope you have it the other way around, AHM doesn't care about you buying a machine, only the dealer does.
So, if there is anyone stringing you along, it's the dealer.
I don't think it's the dealers doing any stringing along, at least not the one Reno, "Big Valley Honda". They put my name on my SE with no deposit (and I asked if they wanted a deposit several times). If they were into "stringing", a deposit helps keep the customer committed. The dealer also knows that if you cancel there'll be another buyer waiting in the wings. They sell all the machines they can get.

Why would Honda not care about selling units?

Just my experience after selling Honda products for 30 years.
They seem to care about automobiles only, and maybe GP Engines.
Just as a point of reference, Honda made lawn tractors for about 12 years, broke even and stopped making them. Not everything Honda makes turns a profit.

We have money down on a phantom camo. I called today and I’m still number four. So they supposedly haven’t gotten a single one in, in over 5 months.
I am in California, Have had many dealers, (Powerhouse and regular), tell me the exact same thing as far as ship dates, June 2, June 30, July 30, and now August 30, It is the factory that is extending the dates, Dealers can't make a living if they can't get something to sell !, and buyers will go somewhere else if they can't get what they want !
The shortage is with all manufacturers.. Automotive, Powersports and Computers are just a few. Ordered a gaming laptop over a month ago and it has been delayed twice. Just so happens that the good ole USA is very dependant on China.
Talked to my dealer on Wednesday and my arrival time of first week of Oct. is still holding. He did mention that others weren't as lucky, but I didn't inquire why. Maybe higher end models are still waiting on certain parts? My order is for a green base.

I had a garage full of accessories waiting for my 2021 P1K5 Deluxe. Got to the point that I hoped that I got a 2021 as I heard rumors of body changes in 2022. Wasn't sure if I would get a 2021, 2022, 2023... LOL
There a lot of 21 1000 LE around, also 1000 deluxe models, many basic 700 models, Just no 1000-5 Deluxe, , Also there is no shortage of Polaris, and Yamaha, and Kawasaki in my area.
I was holding off on pulling the trigger at first with that same concern of having a garage full then being told I would be getting a 202X and it was going to be different. Then I had another beer and the CC came out.
