See I was missing the Jim beam application. I've taken notes for next timeHeavy salt and pepper wrapped up tight in plastic wrap. Let it sit in the fridge for a week to "cure". Smoked at 180ish for the day. I have no idea if that's how it's suppose to be done. I just guessed but it sure tasted like bacon.
Jim Beam is applied to liver at regular doses throughout the process to ensure quality.
