Lol, I've smoked a turkey, but they take so long to cook that they get too strong of smoke flavor, yep, that can happen. So now I smoke them for four hours and then finish them in the oven in an oven bag. So school me on the spatchcock.Ever smoke a spatchcocked turkey?

Big time, I left out one step, my wife brined it also. When we stuck the thermometer in and pulled it out juice started squirting out, the was the most moist bird we ever cooked/smoked ever.I'll give that a try sometime, looks like it would shorten cooking time.
