Honestly I've never driven anything that had it, but we have several 2018 & up f150s in our fleet at work. Some complain about it, but most dont mind. My company truck is a 2014 so I dont have a dog in this fight.

You are correct. It monitors the brake system to make sure you are applying enough pressure to keep the vehicle stopped.
It also looks at steering angle. If your wheels are turned a bit, it won't engage.
I find by the time I let off the brake and get back on the gas, the engine is running again. Not much of a delay.
