I have a Pioneer 700 with stock 25x8x10 tires on the front and 25x10x12 on the back. My SxS's width just fits on my 10' trailer with no room to spare on width.
What is the tallest tire size that I can go with that will not add anymore width? For example, could I go with a 26x9x12 or a maybe a 27x8x12 all the way around without gaining any width? Thank you in advance!

I just learned a similar lesson - my Talon fits on the trailer with an inch to spare, widthwise. That was with 30 x 15 x 9.50 tires. The replacements are 30 x 15 x 10.00 and it just slips between the rails. The third number in the series is the approximate cross section of the tire with one half of it protruding on each side of the tire's centerline. If your 700 'just' fits, you're maxxed with what you have, crosssectionally.

If your putting them on the same rim or rims with the same offset the height should not change the width as long as you dont get a wider tire.
