Title explains my question I guess. The ITP deltas seem to only come in one size...12x7 with a 5+2 offset. Would these be a good wheel choice for the P500? Not sure if a wider wheel offset is to taxing on the wheel bearings? Would these be to heavy? 26" Bighorn originals would most likely be paired to these wheels if that helps.

Offset wheels are superior to spacers for widening the P5. I assume you don't ride restricted trails or transport it in the bed of your truck.

Correct, a few inches of width increase will be acceptable. I was just going to install the 26" Bighorn's on the stock wheels. But seeing how cheap a set on the ITP Deltas are, I may go with them for a little wider stance.

Why is that? Same concept really, you're not putting anymore tire under the machine so...o_O
This has been discussed ad nauseam here, but you'll get the best answer on that from our resident engineer, @Gator :)

That's exactly what I decided. For $200 I can go with 5+2 offset wheels on all 4 corners.. Run 26x9x12's and rotate tires as they wear and also have the ability to have one spare for all. I'll save better than $200 just on the ability to rotate as we run a lot of blacktop between farms. Also, the dealer allowed me $200 on my stock wheels and tires. So $850 became $650 for a wheel and tire upgrade.

These are the wheels I bought.. But with bighorn originals. I like the look of these tires but I read mixed reviews.

I misunderstood, I thought you were going with Delta's.
I wasn't clear.. I thought about the deltas. But for 20 bucks more I like the look of the aluminum better. I know they're not as stout but they should do fine.
