May 1st was open season on Emu here in Tennessee. Several running around wild at Mary's Ridge. Got lucky this morning with my bow. Cut a couple of drum steaks out of the upper leg and letting it marinate in my homemade sauce to be grilled later tonight. Leaner than venison and exceptionally tender. Has the texture and taste of a good piece of beef for sure. Don't ask for the Marinade recipe, it's a secret. Ok, just a couple of ingredients... Olive oil, horseradish, mustard.... many more.
