In your opinion, do you think going 25x8x12 front 25x10x12 rear stock rims will be OK for tippyness without spacers over original stock 24s?
That's the size tires I have on my P520, with 5+2 offset ITP wheels. I would not have called it "unstable", but I put 1.5 inch spacers on it anyway. It feels very stable now. Total width is about 55".

Rule of thumb is if you go up with this machine you should go out. It's going to be tippier than it was bc you're raising the CG. My suggestion would be 26x9 and 26x11 with 1" spacers on all four. I've ridden that way and it was stable. It'll only push you out to about 52" maybe 53" but that's only at the wheels. I'm currently at 55" and have fit through all the gates.
Just don't want to hear about you getting hurt, there's horror stories on this forum from guys that didn't heed the advise.

Ok thanks. Yeah I have to keep it at 50 for gates so 24s it is. Bummer, I hoped 25s would be the tallest without spacers, however, I'm taking the advice going with 24s.

going with 26x9 on 4/3 offset wheels all around with 1in. spacer in the rear only. i've seen this set up here on the p500 and looks very stable. by the way, the delta steel wheels are really closer to 4 1/2 by 2 1/2 according to the box. same price as the 5/2 offset, so i'm not b****ing.

My ITP Magnums 4-3s (15 yrs old) are 4 1/2-2 1/2 also. The performance of a tire that rubs a gate is well worth it. I think out 2 inches (combination tires, wheels, spacers) for every one you go up is a decent formula.....

26 X 9 - 12 front, 26 X 12 - 12 rear and I haven't died yet.
And stock wheel with out spacers.
This puts my 2018 P500 at the same ground clearance as the 2015 P500 before the "sticker" recall.

Are you still at 50 inches with your set up?
OK, had to go out to the barn to measure.
51 1/8 inch wide.

You would have to stick with an 11" wide or less rear tire to keep a strict 50" width.

I am running 27x9-12’s on all four with 2inch spacers.
Same here - 27" with 2" spacers all around. the 2" ones add a LOT of stability going across slopes.
