I am going to purchase a Pioneer 500 this winter, then upgrade it over the winter. I am retiring next year and want to go on many trail riding trips, starting with Colorado's Alpine Loop and Utah Moab trails. One of the first upgrades I will perform is 27 inch tires, however I see posts for 5+2 and 4+3 rims, what do those numbers mean and are they better than the stock 12 inch rims. I think I know the advantage of 14 inch over 12 inch rims (14 inch rims less likely to slip on rim at low pressures?).

Welcome @Keebler from a GA retiree. Do you have any 50 inch trail restrictions? My 27s on 5/2 rims puts me at 54 wide. Just throwing out at least a 3500 lb winch and the sturdy Strongmade front bumper for a direct mount as recommendations.
Are you looking at a P500 or the new P520?

Thanks for the info on rim offsets. I will be getting a P500 and will try to stay at 50". I plan on buying 2" spacers for when I don't need to be 50", however my favorite riding are here in Missouri is Chadwick and it is a 50" area.

Welcome from Colorado. Great choice. Most have said 27s without spacers and 5+2 offset will be tippy but with you'll almost certainly be wider than 50" .

Everybody knows red goes faster! (no they don't) Plus Honda, Red ... Red, Honda ... synonymous! Its like buying a Ferrari and asking the dealer "what are my color options". Nobody does that.

My blue one is the fastest.....even @JeremieBaker will admit to that ;)

Welcome from the 906 & congrats on the pending retirement.

You'll get lots of recommendations on tires, they are a personal choice, with that said.....
if staying at 50" I would get a set of 25" Bighorn 2.0's and mount them on the stock wheels. You'll only increase height by 1/2", not enough to get a tippy feel but the ride & traction will be much improved.

Yes sir but a gear swap is sort of cheating. Imagine how much faster it would be if it would have started with that extra punch of the red ecm 😉

Sorry to disappoint but my web name is based on what my nickname was back in the 70s when I was in the Air Force, which was based on my last name "Elves" and bringing holiday cookies in one Christmas.
Well you can certainly bring cookies to any group ride. I don’t think any of us will complain. 😂

I ran 27x9 tires on factory wheels with 4psi and we really liked it. It was less tippy than with the stock tires and the ride was a lot softer!
