Mine is a smoke hollow electric smoker its struggling with 24# of meat and 33degree outsideI can get my Large BGE right on. It’s still going at 252 (target of 250). I have yet to get temp control down that good on the XL BGE

I've only done chickens and turkeys and apparently you can do steaks and hamburgers and everything but for Birds everyone is Picture Perfect juicy and crispy skin I'm not lyingIve heard alot about these but havent ever seen one.
Looks great!Here is some of the 7 20lb birds we are doing this morning and 6 more hams. Did a brown sugar glaze last night on the hams. No need for honey baked hams here.
